We were invited to attend an interview about the importance of properly storing wine in a rather difficult environment, namely a greenhouse!
Dutch Wine Apprentice (a digital platform for wine lovers, experts and professionals from the wine industry) visited Stadjochies (a restaurant in the middle of the country that is located in its own green environment, namely a greenhouse) to talk about the importance of storing wine in a complex environment.
A greenhouse consists of many windows, which can cause high temperatures in the summer and low temperatures in the winter. These enormous temperature differences are a big challenge. How do you deal with them, how can you absorb them?
The interview shows how we, CoolVaria, tackle and solve this! We were allowed to think about the use of wine climate cabinets (the model for 200 bottles with multiple temperature zones + one storage cupboard (zone only) and of course we had the temperature differences in mind, but we did not expect that large differences could arise in a period of a few hours. The restaurant opens in the morning with an outside temperature of 15 degrees, then the sun comes out, which can quickly cause the temperature to rise above 30 degrees. Professional methods have been found to let this warm air escape, so that the guest is hardly "bothered" by it. But the natural product wine is of course very much affected by these fluctuations.
In collaboration with Stadjochies, we have been able to solve the 'problem' so that their customers can optimally enjoy their visit to the restaurant in the greenhouse. Read the full article here.
